Overview


 Local, local and more local is the best way to describe our July 22nd dinner. The chef pairing for this dinner is a match made in farm dinner heaven. 

The Chef - Chef Matthew Wilcoxson of Ascent Catering is teaming up with Black Forest's own R&R Cafe. This dream team works together on a daily basis and are so excited for the dinner. In their words "it would be an honor, and our duty to put on a great dinner". Chef Matthew and R&R are all about local, so putting on a farm dinner just 10 minutes from the cafe is a perfect fit. Chef Matthew's creativity paired with R&R's homestyle cooking and bakery makes this hearty dinner a must to attend.

The Wine - This dinner will be paired with another of Black Forest's hidden gems, Sette Dolori winery.  Owner Tim Biolchini will be present to talk about what makes his organic sulphite free wine so special. 

The Music - We are so lucky to have Deryk Cunningham performing this night. This one man act will have no problem filling the ranch with his soulful music. It will add to the amazing ambiance of a Night on the Ranch

The Art - We are proud to show off another one of the area's great art talents in Lori Vafiades. Her "life giving" art encompasses watercolor, mixed media, illustrations, originals, cards and more. See her work at The Commonwheel in Downtown Manitou. 

"More than a farm dinner" - The Farm Dinner will always be the centerpiece of the evening, but our events have so much more. Every "Night on the Ranch" will include; full behind the scenes tour of Corner Post Meats (worth the ticket itself), local wine and spirit tasting, live local art demonstrations, local farm and business showcase, live music, and any other local treasures we can get out there.


Chef Matthew Wilcoxson of Ascent Catering

Chef Matthew has been churning out incredible food in Colorado Springs for a long time before going solo and creating Ascent Catering. His last gig was executive chef at The Odyssey Gastro Pub, and he elevated their menu just like every other menu he has touched. Getting out of the restaurant game and into business for himself, Chef Matthew used his talents to create Ascent Catering. Ascent Catering is a high quality, locally focused meal creation and delivery service. Chef Matthew found a home for his new business in the kitchen of  R&R cafe, where he works side by side R&R's staff and provides expert advice on their menu. Sette Dolori Winery - Black Forest, CO

Sette Dolori  produces exceptional wine by sourcing only certified organic grapes, non gmo yeast and fermenting naturally without any additives. This creates the rare and sought after "Sulphite free" wine.  Sette Dolori started as a passionate hobby for owner Tim Biolchini, who began by collecting grape orders for friends and family to turn into wine free of charge. The following and demand that grew for Tim's "old school" wine was enough encouragement for him to go commercial. Sette Dolori is able to produce the rare sulphite free wine because of the timely care for their grapes, small batch processing, and natural fermentation processes.  Now his 5 acre ranch-turned winery produces medal winning wines and has become famous throughout the area.
