Overview
There will be no dull moments for our July 15th dinner. Everyone of our featured guests is bringing A LOT of excitement with them.
The Chef - Chef Jacob from Loyal Coffee Company have been busting the barn doors down to host dinners at the Corner Post Meats ranch for a long time. Chef Jacob has visited the ranch more than any other chef, by far! He could watch our pigs all day. Chef Jacob and Loyal Coffee Company turn out absolutely incredible dishes out of the coffee house's relatively small kitchen. It's mind blowing. He has been planning this dinner for months and we are so excited to see (and taste) he puts together.
Chef Jacob will also be teaming up with Colorado Springs own Wild Woman Fish Company to offer Wild Caught Alaskan Salmon in addition to the dinner. This might not be a "local" product, but Wild Woman Fish Company is a local Colorado Springs business, run by a Colorado native/former Alaskan Fisherwoman who spends every day educating the public on sustainable fisheries and connecting consumers to their fishermen. That is something we can get behind
The Drink - The excitement continues with our favorite Colorado distillery joining us for the evening, Axe and the Oak. Axe and the Oak is a whiskey and moonshine distillery in Colorado Springs that is dedicated to integrity and sourcing local, Colorado Grains. Axe and the Oak will be on site with tastings, cocktails and dinner pairings. Come hear their stories, share a drink, laugh and toast to all things local!
Of course their will be wine as well! This dinner will be paired with Sette Dolori's organic, SULPHITE FREE wine, That's right, they're able to make sulphite free wine because of the delicate care and timely use of their grapes and small batch processing. Not to mention they are crushing these grapes just 5 miles from the Corner Post Meats ranch!

Local Art - The artist duo of Ken and Tina Riesterer will be painting and creating live on the ranch as well as displaying their other works for your viewing pleasure. And we may even have some pieces to raffle off before the night is through.

You will have a full behind the scenes tour of Corner Post Meats, a working sustainable meats ranch, local wine, beer, or spirit tastings, art demos from local artists, local musicians and other entertainment. You will definitely leave with a full experience and deeper connection to everything local! This is the most "Colorado" thing you can do on a Saturday night.

There are a lot of reasons this downtown Colorado Springs coffee house has a true cult following, and one of those reasons is Chef Jacob. Jacob has transitioned from the hectic life of working the Springs best restaurants to creating incredible dishes at a slower pace for Loyal Coffee Company. Chef Jacob has an unwavering passion for using the highest quality, local ingredients. If he wasn't cooking the dinner for us he most definitely would want to join in and take a tour of the ranch, again. This dinner has been in the works for a long time and Chef Jacob has a hundred ideas he wants to try. We are going to get out of the way and let him work his magic. You won't want to miss the show.

Lacie Richardson, owner of Wild Woman Fish Company, is a Colorado Springs native turned commercial fisherwoman turned sustainable seafood distributor. Lacie has worked in just about every commercial fishing industry along the entire outer coast of Alaska. After years of experience and saving crew shares she invested in her own Troller operation based out of Sitka, Alaska. Looking for a way to educate and connect consumers to sustainable fisheries she began to bring her own product back to Colorado and sell it directly. The demand for her wild caught, sushi grade, sustainably fished seafood has taken her away from the boats and back to her hometown permanently. Wild Woman Fish Company distributes directly from their Colorado Springs store front, works numerous farmers markets, and offers nation wide shipping. While her product might not be local, this is a local business offering a sustainably sourced, high quality product with a heavy dose of education. That's something we can support! Sette Dolori Winery - Black Forest, CO
Sette Dolori produces exceptional wine by sourcing only certified organic grapes, non gmo yeast and fermenting naturally without any additives. Ken and Tina Riesterer, both from the Chicago area, met while studying painting at the American Academy of Art. They fell in love, married, and traveled west seeking beauty and inspiration. Finding just that in Manitou Springs, they lived, painted and raised two wonderful children. Somewhere in between that, they branched out into ceramics, and started collaborating in clay. Exhibiting locally and nationally, they both continue to work and grow in paint and clay.
For the past fifteen years Ken and Tina have been partners with a small group of artists in an Art Gallery business in Manitou Springs. Five years ago the gallery moved to a bigger space and prime location and continues to sells local art as the Green Horse Gallery. Ken and Tina's clay studio is behind the gallery, and you can find them most days in the studio working with clay or on the streets or in the hills drawing and painting.
