Tickets: $135 - $115
Time: 5-10pm
Guests arrive at 5pm for meet and greet. Full Ranch Tour will begin at 5:30, followed by dinner (7ish), music, dancing, bonfire, mallow roasting, etc... End at 10pm (if you stay any later you'll be put to work feeding pigs).
What to Wear: Whatever the heck you want! You can stay as clean or get as dirty as you like on the ranch tour. Clothes that you can move and walk around in comfortably is recommended, but hey, if you feel like getting dressed to nines, than go for it! Just remember, this is a working ranch and we will be outside. (high heels not recommended, bust out the boots)
What to Bring: We've got you covered. Just a go-with-the-flow attitude, appetite and thirst will do. And of course, CHECK THE WEATHER for appropriate clothing.
Children: Children over the age of 12 are welcome. Please find a babysitter for the little ones. Seats are limited so all children must have a ticket.
Food: Most dishes are served family style, so get ready to meet your neighbors! Since our menus are changing up to the day of the dinner based on what is in season we are not able to accommodate severe food allergies. We can guarantee all the food is locally sourced and of the highest quality!
Drinks: We've got you covered.

Saturday August 11th Overview
Join us on August 11th for a farm dinner from the meat masters, il porcellino salumi. Led by Chef Bill Miner, il porcellino is on the map as one of the best sandwich shops in Colorado, and for having some of the best Charcuterie in the NATION! Il porcellino has always been passionate about sourcing meat that is local and of the highest integrity, and have been longtime supporters of Corner Post Meats and many other local ranches. This is an example of someone doing it right! Go seek them out at farmers markets, local events, or their shop in Denver to get to know one of the true gems of the Colorado food scene. We are so proud to have il porcellino showing off their talents on the ranch and we can't wait for you to connect with them.
The Chef -
Chef Bill's passion for food was developed in his home state of Ohio from visits to local farms, gardens and orchards. After moving to Colorado he developed this passion into a profession after inspiring work under Chef Mark Gordon at Medina in Boulder. Soon after he enrolled in The Culinary School at the Art institute in Denver where he graduated at the top of his class. He trained at The Oxford Hotel and The Denver Country Club while in culinary school, as well as spending a year cooking for “rock stars” at a backstage catering company in Denver. From there, Bill joined the team at The Food Guy Catering Company in 2005 as the Chef de Cuisine. He helped turn the company from a small, “Mom & Pop” caterer into Relish Catering & Events, a multidimensional and dynamic catering & event business. Along the way, he was promoted to Executive Chef. Relish is consistently recognized as a leader in the catering industry and annually receives awards distinguishing itself as the premier event company in Denver.
Bill prides himself on sourcing ingredients from the wonderful state of Colorado and by doing so, he has developed numerous relationships with local farmers and ranchers. In 2012, Bill had started pursuing an interest in dry curing whole muscle meats like Coppa and Breseola. After working on these recipes, tweaking them a bit, and sharing some samples with friends and family, he was told that he should figure out a way to sell these products! This is when the idea for il porcellino salumi was born. Bill continued his passion for cured meats by coming up with recipes for the Mortadella and the Berkeley Ham, these are the same recipes that are used today. In October of 2015, the dream became a reality as il porcellino salumi opened its doors as the first and only retail Salumeria in Denver. The business is an extension of Bill, and continues to evolve everyday. With plans for a USDA Wholesale facility on the horizon, the future looks very bright, and Bill can't wait to share il porcellino's "Colorado Cured Meats" with customers around the country!
The Music - This band won't have to travel far to find their way to the ranch. Monument's own Wirewood Station will be rocking the Front Porch Stage. What do you get when you put a Rocker, a Classical Violinist, a Bluegrass Guitarist and a Jazz Bassist in the same room... Award winning WireWood Station! This eclectic group of musicians are the reigning champs of the "Best Acoustic Band in Colorado" at the Rocky Mountain Music Festival as well as winning the "Best Band in Colorado Springs" by the readers of the Gazette for 2016 and 2017. The will be the perfect fit for an authentic Colorado Farm Dinner.
The Drink - We love all things local and it doesn't stop with food. Every dinner will offer a combination of local wine, beer and spirits, all of which are produced in a 30 mile radius of the ranch.

You will have a full behind the scenes tour of Corner Post Meats, a working sustainable meats ranch, local wine, beer, or spirit tastings, art demos from local artists, local musicians and other entertainment. Use the above address in any navigation site/app and it will take you to the Ranch entrance. Then follow the signs. The 1,500 acre ranch lies right in the heart of Black Forest. Just 25 minutes north of Colorado Springs and 60 minutes south of Denver the ranch is very accessible. Please remember this is a working ranch, so please do not visit outside of the dinners or their posted store hours. |
