Saturday June 30th Overview
The first dinner of the year is in amazing hands, the hands of Chef Mario Vasquez and Colorado Craft Tejon Street Social. Colorado Craft strives to showcase the best Colorado has to offer every day in their restaurant. They are dedicated to supporting all things local, and creating food of the highest quality. If you're looking for a night out with integrity go visit them in downtown Colorado Springs. We're lucky to have this ideal Chef and Restaurant team to kickoff our summer of authentic Colorado farm dinners!
The Chef - Mario Vasquez began his culinary career by attending Le Cordon Bleu, in Sacramento, California. After graduating from Le Cordon Bleu, Mario accepted a position at the Farmstead Restaurant in Napa Valley, under the direction of Executive Chef Sheamus Feeley. After spending three years at Farmstead, he quickly ascended in his positions, eventually becoming Sous Chef. After the Farmstead, Mario spent time traveling and cooking in France and Spain where he was inspired by the simple approach, utilizing the seasons and what was available to highlight food. Upon returning to California, Mario accepted the Sous Chef position under Chef Casey Overton at the triple 5-star Diamond Montage Laguna Beach Hotel and Resort. Here he was able to learn and work with some of the best chefs in Southern California. Chef Mario first moved to Colorado Springs to work alongside Executive Chef Sheamus Feeley to open Till Kitchen. He was excited for the move and opportunity to go back to his roots of working with fresh and simple ingredients. After the opening of Till Kitchen he then moved on to become the Executive Chef at Garden of the Gods Gourmet. Chef Mario was than offered the chance to design and co-own his first restaurant, culminating in the opening of Colorado Craft in January of 2018.
The Drink - We love all things local and it doesn't stop with food. Every dinner will offer a combination of local wine, beer and spirits, all of which are produced in a 30 mile radius of the ranch.
The Music - You can hear the Tejon Street Corner Thieves on the radio these days, (if it's a good station at least). Colorado Springs most beloved band got its start, well you guessed it, on a Tejon St. Corner. They have worked their way into being a permanent fixture in the Colorado music scene and have toured nationally. The TSCT have a true cult following and for good reason. Follow them on facebook to see their schedule and check out their website to hear original music
More Than Just a Farm Dinner - Every "Night on the Ranch" is more than just a Farm dinner, its a celebration of everything local. You will have a full behind the scenes tour of Corner Post Meats, a working sustainable meats ranch, local wine, beer, or spirit tastings, art demos from local artists, local musicians and other entertainment. You will definitely leave with a full experience and deeper connection to everything local! This is the most "Colorado" thing you can do on a Saturday night.
